The Blade
Crafted from AUS-8 high-carbon molybdenum stainless steel and heat-treated to HRC 57, the long narrow blade delivers strong corrosion resistance, reliable edge retention, and effortless re-sharpening. The 70/30 asymmetrical bevel concentrates the grind for a refined cutting geometry that slices cleanly with minimal resistance — ideal for trimming sinew, portioning boneless roasts, and filleting fish from heel to tip in one fluid motion.
Craftsmanship
Every knife is hand-inspected by Misono's team in Seki City before leaving the workshop. The full-tang pakkawood handle with stainless steel bolster provides a secure, well-balanced grip through extended use — built to the same exacting standard as Misono's premium lines.
