The Blade

The cutting edge is forged from Hitachi Yasugi Blue Steel No.1, clad in soft iron for durability and impact resistance. Hammered and forged by hand, the dense blade structure maximizes the characteristics of Blue Steel No.1 — exceptional sharpness, outstanding edge retention, and easy re-sharpening. The thick 7mm spine provides the weight and authority needed to split fish heads, break down poultry, and cut through semi-thawed frozen foods with confidence.

Kurouchi Craftsmanship

The Kurouchi finish — a black oxidized layer left from the forging process — protects the blade and gives each knife a distinctly rustic, handcrafted character. As a hand-forged product, minor variations in size and surface are a natural expression of its making, not a defect.

Care & Maintenance

Blue Steel requires attentive care. A rust-preventive varnish is applied at the factory — sharpening the blade will remove it and reveal its true cutting performance. Wipe dry immediately after use and store in a dry place. Hand wash only.
