The Blade

Crafted from AUS-8 high-carbon molybdenum stainless steel and heat-treated to HRC 57, the blade delivers strong corrosion resistance, reliable edge retention, and effortless re-sharpening. The 70/30 asymmetrical bevel produces a refined cutting geometry that performs across a full range of techniques — from push-cutting and slicing to fine chopping and rocking.

Craftsmanship

Every knife leaves Misono's Seki City workshop only after passing multiple rounds of hand-inspection — the same rigorous standard applied across all Misono lines. The full-tang pakkawood handle with stainless steel bolster provides a well-balanced, comfortable grip suited to both extended professional use and home cooking.
