The Blade
Crafted from AUS-8 high-carbon molybdenum stainless steel and heat-treated to HRC 57, the triangular single-bevel blade delivers strong corrosion resistance and a razor-sharp edge that stays keen through intensive use. The reverse tanto tip allows precise penetration at joints and tight spaces, while the thick spine and reinforced heel provide the durability needed for cartilage and connective tissue work. Equally capable of filleting fish and trimming red meat.
Craftsmanship
Every knife is hand-inspected by Misono's team in Seki City before leaving the workshop. The full-tang pakkawood handle with stainless steel bolster delivers a secure, confident grip — essential when working close to bone.
