Misono EU Carbon Steel Gyuto – Dragon Engraving
Hand-Forged in Seki. Built for Those Who Know the Difference.
The Misono EU Carbon Gyuto is the choice of professionals who have moved past marketing and arrived at conviction. Hand-forged in Seki City by Japan's oldest Western-style knife maker, this is a blade that earns its place at the cutting board through pure performance — not aesthetics, not branding, not compromise.
The Blade
Swedish carbon steel is the benchmark by which serious kitchen knives are measured. At HRC 60, the Misono EU Carbon achieves a level of hardness that allows for an exceptionally fine edge — sharper out of the box than most knives will ever be, and capable of taking a keener edge still with a whetstone. Edge retention is outstanding. Re-sharpening is intuitive. This is steel that rewards those who know how to use it.
The 70/30 asymmetrical bevel concentrates the grind toward the right side, producing a cutting geometry that approaches the precision of a single-bevel blade while remaining fully functional for right-handed users across all cutting techniques. The result is a blade that feels decisive — every cut clean, every contact intentional.
Swedish Carbon Steel vs Standard Stainless — Why It Matters
| Swedish Carbon Steel | Standard Stainless Steel | |
|---|---|---|
| Edge Sharpness | Exceptional — takes a finer edge | Good |
| Edge Retention | Outstanding at HRC 60 | Moderate |
| Re-sharpening | Responsive, intuitive on whetstone | Requires more effort |
| Hardness | HRC 60 | HRC 52–56 typical |
| Reactivity | Reactive with acid — develops patina | Non-reactive |
| Feel | Alive, responsive, precise | Predictable, forgiving |
| For whom | Dedicated cooks who maintain their knives | Low-maintenance preference |
Craftsmanship
Fifty artisans. Every knife hand-forged, hand-ground, hand-sharpened. No shortcuts, no automation at the blade level. Select sizes carry a hand-engraved Dragon motif on the blade face — not decorative afterthought, but a mark of distinction applied to an already exceptional piece of work.
The full-tang pakkawood handle with brass rivets delivers the balance and grip confidence that extended prep work demands. Comfortable in hand from the first cut. Built to outlast most kitchens.
Care & Maintenance
Carbon steel is reactive — it will develop a patina over time that actually improves corrosion resistance and is considered a mark of a well-used blade. That said, it requires attention that stainless does not.
- Wipe dry immediately after use — never leave wet
- Avoid prolonged contact with high-acid foods (citrus, onion, tomato)
- Oil lightly when storing for extended periods
- Sharpen on a whetstone — honing rods are not recommended for carbon steel at this hardness
- Hand wash only — never dishwasher
