The Blade

Swedish carbon steel is the benchmark by which serious kitchen knives are measured. At HRC 60, the Misono EU Carbon achieves a level of hardness that allows for an exceptionally fine edge — sharper out of the box than most knives will ever be, and capable of taking a keener edge still with a whetstone. Edge retention is outstanding. Re-sharpening is intuitive. This is steel that rewards those who know how to use it.

The 70/30 asymmetrical bevel concentrates the grind toward the right side, producing a cutting geometry that approaches the precision of a single-bevel blade while remaining fully functional for right-handed users across all cutting techniques. The result is a blade that feels decisive — every cut clean, every contact intentional.

Care & Maintenance

Carbon steel is reactive — it will develop a patina over time that actually improves corrosion resistance and is considered a mark of a well-used blade. That said, it requires attention that stainless does not.

  • Wipe dry immediately after use — never leave wet
  • Avoid prolonged contact with high-acid foods (citrus, onion, tomato)
  • Oil lightly when storing for extended periods
  • Sharpen on a whetstone — honing rods are not recommended for carbon steel at this hardness
  • Hand wash only — never dishwasher
