The Motokane Blue Steel Nakiri is built for one purpose — vegetable work done right. A tall, flat-profiled blade that moves through produce with authority, a Kurouchi black forged finish that carries the character of the forge, and Blue Steel No.1 at the core that holds an edge longer than most cooks expect. This is a working knife, not a display piece.

The Blade

The cutting edge is forged from Hitachi Yasugi Blue Steel No.1, clad in soft iron for durability and impact resistance. Blue Steel No.1 sits at the top of the carbon steel hierarchy — higher carbon content than Blue Steel No.2, capable of taking a finer, keener edge, and holding it longer under daily use. The 3mm spine provides enough mass for push-cutting dense root vegetables without flexing, while the 165mm flat profile keeps the entire edge in contact with the board through each stroke.

Kurouchi Finish — Function and Character

The Kurouchi (黒打ち) finish — the black oxidized layer left from the forging process — is not decorative. It acts as a natural barrier against corrosion on the upper blade face, while the polished cutting bevel below delivers maximum sharpness. As a hand-forged product, minor variations in surface and geometry are a natural expression of its making, not a defect.

Craftsmanship

Forged by one of Tosa's premier blacksmiths — a region renowned for producing Japan's most respected hand-forged blades. The walnut round handle with plastic collar sits comfortably in hand through extended prep sessions, warm and natural against the palm.

Care & Maintenance

  • Wipe dry immediately after use — never leave wet
  • A rust-preventive varnish is applied at the factory — sharpening will remove it and reveal the blade's true cutting performance
  • Oil lightly when storing for extended periods
  • Hand wash only — never dishwasher
  • Reactive with high-acid foods — rinse promptly
