The Misono Molybdenum Salmon Gyuto solves one of the most common frustrations in everyday cutting — food sticking to the blade. A row of precision-ground oval dimples runs the length of the blade face, creating micro air pockets that break suction between steel and food. Proteins release cleanly. Vegetables don't cling. Every cut moves faster and with less effort.

The Blade
AUS-8 molybdenum vanadium stainless steel at HRC 57 — reliable sharpness, strong corrosion resistance, easy re-sharpening. The 50/50 double bevel suits both right and left-handed users. Each blade is hand-sharpened on a whetstone before leaving the workshop.
Craftsmanship
Full-tang black pakkawood handle with stainless steel bolster — water-resistant, balanced, and comfortable through extended prep. Hand-made in Seki City, Japan.
